Chinese Chicken Salad (Low Carb!!)

Chinese Chicken Salad

I know, I know - low carb salads and guilty pleasures don't normally go together, but this is one of my go-to healthy recipes that I literally build my week around.

Ingredients
  1. Salad
  2. 3 Cups Lettuce finely shredded (I use Romain, cabbage is more traditional)
  3. 2 Cups Red Cabbage finely shredded
  4. 1 Cup Carrot shredded
  5. 1/2 Cup Green Onions chopped
  6. 1/2 Cup Cilantro chopped
  7. 2 Cups Chicken shredded
Dressing
  1. 3 Teaspoons Ginger grated
  2. 3 Garlic Cloves minced
  3. 3 Tablespoons Soy Sauce
  4. 3 Tablespoons Rice Vinegar
  5. 1 Tablespoons Sesame Oil
  6. 1 Tablespoon Vegetable Oil I used avocado oil, but any neutral oil will do
  7. 2 Teaspoons erythritol or 1 1/2 Teaspoon Sugar
Toppings 

  1. Sesame Seeds
  2. 1 Cup Almonds* slivers. (Can sub for crispy noodles or ramen if you aren't watching your carbs)
  3. Cilantro chopped
Instructions
  1. Add all dressing ingredients to a salad shaker or small bowl, shake/mix and set aside.
  2. Add the salad ingredients to a large bowl and toss to combine.
  3. Pour dressing over salad and toss.
  4. Top with cilantro, almonds and sesame seeds and enjoy!
